Alléno and Rivoire: Tradition Meets Luxury

Alléno & Rivoire is the alliance of two savoir-faire, inspired by cooking and pastry, to create a unique collection. The result is amazing, because it opens new ways of enjoying chocolate. Their creations surprise, offer multiple novel combinations, and transform into a palette of colours that shake up our habits and perceptions.

Yannick Alléno is a three-Michelin-starred chef celebrated for his inventive approach to cuisine and dedication to sourcing the finest ingredients.

Originally from Lyon, Aurélien Rivoire obtained a CAP in pastry, confectionery, ice cream and chocolate. In 2014, he took the position of pastry chef for the Yannick Alléno group , first in Paris then in Courchevel in the gourmet restaurant Le 1947*** . It was in 2015 that Aurélien Rivoire became the executive pastry chef of Pavillon Ledoyen where he worked for 8 years alongside Yannick Alléno. He is the winner of the Dessert au Café prize in 2019 and will be named Pastry Chef of the Year 2021 by Gault & Millau, in recognition of his creativity and modern pastry.

By using birch water, Aurélien Rivoire revolutionises both textures and nutritional properties of chocolate as well as fruit preserves. After several years of research, he developed preparation techniques allowing him to use this ingredient – ​​already known for its therapeutic virtues – in order to candied his fruits without any added sugar.

Aware and concerned about consumer expectations, Aurélien Rivoire took up the challenge of crafting a healthier version of chocolate. Due to a very low glycemic index (7 for birch water compared to 70 for normal sugar) it respects the health of the finest gourmets.
