It was a real experience: cooking Saint Honoré together with a french chef! I can't wait to share this with you, with all the details. First, let's find out how and where.
At Galeries Lafayette Maison & Gourmet, you come to shop, taste, dine, buy souvenirs... and now you can cook as well! In an exclusive partnership, the department store has invited the prestigious FERRANDI Paris school to host CHEF’S SECRETS and BAKER’S SECRETS. There’s something for everyone: from workshops dedicated to sweet treats, savoury dishes, mixology and baking workshops for children. They are designed to teach you how to whip up classic dishes from traditional French cuisine. You will have a chance to work alongside chefs from the most prestigious cooking school in the world and let them uncover the secrets of iconic French recipes.
I chose Baker's secrets course as I am a very pationate hobby baker, but never happened to make a Saint Honoré! To be completely honest, it looks like a very complicated dessert with multiple steps and I could only see hours in the kitchen. So it was the right decision to choose this particular course. Because I had a false conception!
Our group arrived 10 minutes before the class. Everyone had their own apron and a toque - a real chef's hat. Besides that - a paper for notes, of course, and a "step by step" recipe.
Now the magic begins! We were guided through the whole process of a workshop and then immediately started preparing thigs for our dessert: cutting pears, mixing cream with vanilla, adding chestnut paste, baking choux and so on. It is so easy when a professional chef reveals all his tricks and secrets! How to save time, what to prepare beforehand and keep in the fridge overnight, how to cool cream faster etc.
I cannot believe I lived all my life without baking this gorgeous dessert, thinking that It is diffult and I dont have the right appliances in my kitchen. But even if you don't - the school is situated on the third floor where you can buy everything necessary for baking at home. Forms, piping bags, whisks and so on.
